Our chickens come from Label Anglais, pick up a cookery book by Heston Blumenthal or Gordon Ramsey and you are likely to see them referred to.
Their breeding means they are much slower growing than modern chicken, which gives the meat longer to develop a good texture. And, unlike most other chicken, ours are grown to full maturity – all those extra weeks scratching around the fields and hedgerows helps bring out a fuller, more satisfying flavour in the meat.
Just taste the difference.
Please note chickens include giblets and have had corn in their diet so as is normal have a slight yellow colouring.
